Grown at the highest elevations in the Summit Origins range — 2,000 to 2,200 metres in Ethiopia's Sidama region. A natural process and local heirloom varietals produce the kind of complexity that defines why Ethiopia is considered the birthplace of specialty coffee.

Sidama sits in southern Ethiopia at elevations that make it one of the most distinctive coffee-growing regions on earth. The Local Heirloom Sidamo varietal has never been standardised or cross-bred — it is coffee in its most original form, shaped entirely by altitude, soil, and the slow rhythm of natural processing. Harvested cherries are laid on raised beds and sun-dried whole, allowing the fruit to ferment around the bean and transfer its character inward. The result is a cup that carries stone fruit, bright acidity, and a sweetness that lingers. The medium-light roast preserves rather than transforms — this is the most expressive coffee in the range, and it requires very little done to it.
